Petra’s Pancakes

In German, these are called “Pfannkuchen” (pancakes) but many Americans would recognize them as crepes since they are very thin. My mom made these almost every Sunday when I was growing up. They were so good, she needed to double the recipe :)

Ingredients
  • 1 cup flour
  • 1 cup milk
  • 4 eggs
  • Pinch of salt
  • ½ teaspoon sugar

Instructions
  1. In a bowl, mix ingredients.
  2. Chill for about an hour (not necessary but does make the batter a little thicker)
  3. On medium heat, prep a skillet with some butter and olive oil.
  4. Test to see if the heat is right by adding a drop of batter. When it starts cooking, you’re ready.
  5. Place a ladle of batter into the skillet and swirl the batter until it coats the entire bottom. When the edges curl a little, flip the crepe and wait a few more moments for the underside to firm up.
  6. Stack the finished crepes on a plates and cover with a moist paper towel.
  7. Serve with fresh fruit, whipped cream, ice cream, berry sauce, Nutella, jams, canned pitted dark cherries.
